Ingredients
- 2 thin slices beef
- 1 garlic clove
- 1 roasted red pepper ( pimiento moron)
- 2 slices bacon
- 2egg yolks (boiled)
- Salt and pepper
SAUCE
- 1 food colouring (asafran)
- 1 spring onion
- 1 garlic clove
- 1 roasted red pepper (pimiento moron)
- 1 tomato
- 1 cup beer
- 1 cup water
- Salt and pepper
The Meat and Filling
Finely chop all the ingredients and fry in a little olive oil, all except the boiled egg yolks. Once nicely fried add the egg, and proceed to make up your parcels. Divide the mixture into two. Put half on each slice of beef and roll, secure with toothpicks and fry lightly to seal your parcel.
Put to one side.
The Sauce
Fry all vegetables until tender, liquidize and return to the pan, pour the beer cook and then add the water, salt and pepper. Stir and cook for about 2 to 3 mins. Introduce the parcels and cook until the meat is tender. Cook time depends on the toughness of the meat. Always add the same amount of beer as water if you need to add any during cooking .
You can serve with mash croquettes or boiled rice.
