Sweet Potato Fries

I have a slight new obsession lately when it comes to food and I think I may have overindulged. With the passed few meals I have been making Homemade Sweet Potato Fries on the side and OH MY are they tasty.

The Sweet Potato is soft with a different, sweeter (duh) and slightly tangy taste than your regular potato and best of all it’s actually full of A WHOLE LOT more vitamins and nutrients than your regular old potato.

Make sure you have a sharp knife as they are slightly tougher to cut than regular potatoes. Preheat your oven to 190 degrees C, rinse your sweet potato and slice, I slice the potato in half longways and proceed to slice those into thinner strips (like thick crisps). Once I’ve done that I go ahead and slice them into chips.

Transfer your chips onto an oven dish and drizzle with oil, then season with cayenne pepper and coriander as well as the usual pinch of salt and pepper. A word of advice though… don’t go too overboard with the cayenne pepper, you’ll just end up regretting it later.

When you’re done, place the oven dish inside the oven, preferable the middle shelf for 30 – 40 minutes until you feel they have softened. If you feel like trying one then do so, you’ll only know by trying. Serve as a side to any dish.


Ingredients

  • Sweet Medium Potato
  • Cayenne Pepper
  • Salt
  • Coriander
  • Pepper
  • Olive Oil

Method

Preheat oven to 19o C.

1. Rinse and slice your sweet potato into chips.

2. Transfer to an oven dish and drizzle generously with olive oil. Season with cayenne pepper, coriander, salt and pepper

3. Place in the oven for 30 – 40 minutes until soft.

Serve.
