Cauliflower soup is a lovely, simple dish with a bit of a sour, spicy kick to it. What’s better than a cosy bowl of hot soup on a cold winter’s eve? This recipe was something I came to know growing up and something mama has tweaked as time went on.

Cauliflower Soup
Cauliflower soup is a lovely, simple dish with a bit of a sour, spicy kick to it.
Servings: 4
Ingredients
- 2 tomatoes
- 3 Garlic Cloves
- 1/2 Lemon
- 1 whole Cauliflower
- 1 ltr Vegetable Stock
- Tabasco
- Black Pepper
- Salt
Instructions
- Wash and chop up your cauliflower. Place the cauliflower in a large pot and over a medium heat. Pour the stock over and leave to boil until soft, feel free to top up with boiling water if need be.
- Next, finely dice up the tomatoes and garlic and pass them info a frying pan over a low – medium heat with olive oil. Leave this to cool slowly and season with salt, stirring until the tomatoes soften into a puree.
- Once soft, pour the tomato mixture into the cauliflower pot and stir in to break up the cauliflower into smaller pieces. Squeeze in some lemon, a few drops of tabasco sauce and season with salt and pepper.
It’s great with a bit of a kick!
