Stewed Squid

  • 3/4 kilo squid rings
  • large onion
  • half leek
  • 3 cloves garlic
  • 1 green pepper
  • frozen peas
  • 1 glass white wine
  • half glass brandy
  • enough fish stock to cover the squid
  • 1 bay leaf
  • 4 potatoes
  • salt
  • pepper
  • a few fried almonds.


1. Fry onion, leek and a few minutes later fry the garlic and green pepper until soft.

2. Add the wine, brandy and squid and top up with the fish stock, bay leaf salt and pepper and the squid. Bring to the boil and simmer for about 15 minutes until the squid is beginning to get softer but not quite done.

3. Add 4 large potatoes in chunks and simmer for a few minutes then add the peas simmering until all is soft. Fry a few almonds in a frying pan with oil.

4. Blend them when fried and add to the casserole. I add some lemon (optional).
