Left-over Chicken Croquettes


  • 1 Onion
  • 4 oz Chicken Mince
  • 2 tbsp flour
  • 1 pint milk
  • Nutmeg
  • Chicken Stock
  • Salt
  • Pepper
  • Grated Cheese
  • Breadcrumbs
  • Garlic
  • Parsley
  • Cauliflower
  • Olive Oil
  • Lemon Juice
  • carrots
  • vinegar
  • Eggs


1. Fry 1 onion, add about 4ozs  cooked minced Chicken, 2 tablespoons flour and start adding about a pint of warm milk flavoured with pinch of nutmeg, half chicken cube, salt and pepper, a little grated cheese and mix until forming a ball in the centre of the pan.

2. Make croquettes when cold (preferrably after having been a few hours in fridge) and roll in egg and breadrcumbs with garlic and parsley.

3. Serve with cooked marinated cauliflower with fried garlic, olive oil and lemon juice and cooked carrots marinated with olive oil, vinegar, garlic and parsley.
