Gammon Croquettes


  • A piece of gammon left over from Pea Soup
  • 2 large potatoes
  • 1/2 chopped onion
  • 2 tsp fresh parsley
  • 1 tsp fresh majoram
  • Salt
  • 2 eggs
  • 2 handfuls breadcrumbs


1. Mince gammon and onion together. Boil potatoes; once cooked drain, mash and add this to gammon and onion mix.

2. Add parsley, majoram, eggs, breadcrumbs and salt. Mix all together; if too sticky add more breadcrumbs.

3. Make croquettes and cover twice through breadcrumbs.

4. Fry in hot oil
