Fruit and Nut Bread

  • 3 cups S.R. Flour
  • 1 cup fructose suitable for diabetics
  • 1 cup sultanas
  •  1 cup pinenuts
  • 1 cup chopped prunes
  • 1 cup chopped walnuts
  •  2 eggs
  • 1 cup milk


Preheat oven 180C

1. Sift flour and add fructose sugar, sultanas, pinenuts, prunes, walnuts with metal spoon, mix well. Beat eggs with milk and fold into the flour mix.

2. Into oven for 1 hour 15mins. Check halfway through cooking time.

Can be served hot or cold with or without butter
