- 1 Chicken Breast
- 1 Large Bell Pepper
- Chorizo (as much as desired)
- 1 Large Onion
Skewer or Pinchito, as they are known in Gibraltar, don’t have to be complicated. Here’s a simple way to enjoy Pinchitos when having a BBQ.
Pre-soak your skewers in water so they do not burn so easily on the BBQ.
1. Dice you chicken breast into decent sized cubes and drizzle with olive oil, sprinkle paprika, pepper and salt over them and rub in your spice and seasoning.
2. Place your chicken to one side for the moment and slice you pepper into rectangular shapes big enough to fit on the skewers. Do the same with your onion
3. Prepare your skewers, pepper, chicken, onion, chorizo and so on. Fill 3/4 of your stick leaving enough space to have some stick off the BBQ when cooking.
