I think it’s fair to say that over the last two years we may have made at least one or two banana bread recipes, especially at the start of 2020 (we wont talk about it). Well, since then I may have been tweaking the odd recipe here and there and I’m proud to say I think I found something MAGICAL.
The yogurt gives this banana bread an extra level of moistness and flavour thats just *chef’s kiss*
Ingredients
- 250g self raising flour
- 100g sugar
- 100g unsalted butter
- 3 large ripe bananas
- 2 eggs
- 125g stracciatella yogurt
- 2 tsp baking powder
- 1 tsp vanilla extract
- 150g Chocolate chip cookies
Method
Preheat oven to 180C
Whisk the eggs and sugar together until fluffy. Mash 2 of the bananas until soft and smooth and add these to the egg mix, pour in the butter (melted but not hot) and the yoghurt and combine the ingredients together.
Add the flour and the baking powder to the mixture and fold together until smooth and creamy. Then finally add in the chocolate chunks and fold the cake mix over to try and get even distribution.
Prepare a load tin with greaseproof paper / baking parchment and pour the banana bread mixture inside, give it a knock to spread it out and get rid of any trapped air. Next, Cut the 3rd banana in half and lay it out on top pushing it down slightly, then sprinkle the top with a it of sugar.
Bake in the oven for about 30 – 40 minutes until golden and a nice comes out clean.

Mama’s Yummiest Banana Bread with Chocolate
