If you’re a carrot cake fan and like cherries then this similarly sweet and moist walnut and cherry cake will give you the satisfaction you’re looking for.
Ingredients
- 4 Eggs
- 200ML Sunflower Oil
- 200G Self Raising Flour
- 115G Brown Sugar
- 85G Caster Sugar
- 115G Walnut Pieces
- 30G Cherries
- 1 Tsp Baking Powder
- 1 Tsp Bicarbonate of Soda
- 1 Orange (Zest & Juice)
- 1 Tsp Cinnamon Topping
- 100G Icing Sugar
- 2 Tsp Milk
Method
Beat the eggs with the oil, and beat in the sugar. Add all the dry ingredients including the zest and juice of an orange, and beat together for 3 minutes.
Fold in the flour, baking powder, cinnamon and bicarbonate of soda.
Pour mixture into a lined tin and bake in the oven at 170°C for 40 minutes or until a skewer comes out clean in the centre.
Leave to cool, and decorate the cake by drizzling over with dissolved icing sugar or covering in butter-cream.
Decorate with walnuts and sugar threads.
