- One large aubergine cut into slices
- 1-2 tsp salt
- olive oil to fry
- Plain flour
1. Wash sliced aubergine and pat dry with paper towel. Place slices on a plate and lightly salt, turn over and salt other side. Allow to sit for one hour to draw moisture from the aubergine.
2. After an hour pat dry with paper towel. Heat oil in frying pan. Pour flour on to a plate and lightly cover slices of aubergine in flour on both sides, shake off excess flour. Then fry turning the slices over until they begin to turn golden brown.
3. Remove slices from oil and place on paper towel to absorb excess oil. Drizzle honey over the top to serve.
