- 200grs Sweet Freedom
- 1 tablespoon fructose
- 1 egg white
- 300g Ground almonds
- 1 teaspoon lemon rind
- 1 pinch cinnamon
If you are not diabetic or don’t need to omit sugar then instead of the fructose add 100 grs sugar. And use ordinary honey.
1. In a wide frying pan mix the honey and sugar, stir until it becomes thick (this takes about 10 mins). Have a very well beaten egg white waiting.
2. Remove from the heat and add the egg white and mix. Granules may form but it will dissolve with time. Place back on the stove, stir until it thickens and changes colour , add lemon rind and cinnamon, mix well then add the almonds, making sure it really mixes in.
3. Prepare any tin or container with grease proof paper. Once all the mixture is in the container press into shape and place pressure on top. Leave to set for about five hours.
