Diabetic Sweet Bread (Pan Dulce)

  • 2oz lard
  • 2oz margarine
  • 2oz fructose
  • 12oz S.R.flour
  • 2oz blanced almonds
  • 2oz raisins stoned
  • 2oz sultanas
  • 2ozs pine nuts
  • 2oz candied peel
  • 2 eggs
  • 1/4 teaspoon baking powder
  • 1 wine glass aguardiente

1. Rub lard and margarine into flour.

2. Add baking powder and sugar, fruits, nuts.

3. Beat in the eggs and aguardiente. The mixture will be sticky, put plenty of flour on the worktop and knead.

4. Form into two loaves, brush the top with egg yolk and cook in a moderate oven for about 1 hour.
