Ingredients
- 450 g Self Raising Flour
- 225 g Sugar
- 225 g Margarine
- Pinch of Salt
- Pinch of Mixed Spice
- 112 g Sultanas
- 112 g Currants
- 56 g Glazed Cherries
- 2 Eggs
- 150 ml Milk
Method
1. Preheat oven to 180°C
Using the rubbing method do the following:
1. Mix flour and butter until they form a breadcrumb texture.
2. Add all the dry ingredients.
3. Beat eggs with the milk and add to the mixture.
4. Once ready pour into a greased baking tin and pop it in the oven for 45 minutes – 1 hour, checking occasionally to avoid it burning.
