FILO Surprise Parcels


  • 1 roll defrosted FILO pastry
  • 1 med tin mushrooms
  • 1 med tin sweet corn
  • 1 small tin red peppers
  • 1 med onion chopped
  • 1 garlic clove chopped
  • 1 tablespoon olive oil
  • 1 veg cubes
  • 1 pkt passatta
  • 200grs grated cheddar cheese
  • Couple drops Tabasco
  • Salt and pepper
  • Melted butter to brush and stick FILO pastry sheets


Heat oil and sauté the onions, red pepper, garlic then mushrooms, fry for a bit add the sweet corn, stir and fry add passatta and Tabasco, salt and pepper. Once sauce is ready put to one side to cool.

Cut the FILO into long strips, about 20cm long and about four fingers width. Make a cross and then side ways . Making a strong reinforced centre and drop a tablespoon of the cooled mixture. Start crossing your FILO pastry brushing it with melted butter to help them stick together and making your parcel. Place on a lined oven tray and into a preheated oven at 180 deg until golden brown.
