Diabetic Rosco de Anis

  • 4 eggs
  • 8ozs fructose sugar
  • 8ozs S.R. Flour


  • 2 cups fructose sugar
  • 2 cups water
  • 2 squirts Dry Anis


I have just converted a recipe Dunia Prior posted some time ago of the Rosco de Anis, an old recipe from her grandmother , into a delicious diabetic cake. Thank you Dunia.

Beat eggs with sugar then very slowly add the sifted flour. Put in a greased ring mould and in a preheated oven 170 deg for 40 mins.

For the syrup bring to boil all the ingredients until when touched it gives a sticky feeling. Put aside.

When cake is ready and left to rest for 5mins pour the syrup over the cake still in he mould. Now it is ready to be flipped on to a cake dish and served.
