- 175g unsalted butter
- 175g light brown soft sugar
- 3 eggs
- 250g Self raising flour
- 2-3 tbsp milk
- 300g mixed dried fruit
In a bowl beat the butter and sugar until pale and creamy, then beat in the eggs one at a time, adding flour little by little.
Fold in the remaining flour and the milk. Add all the dried fruit and fold until well combined.
Line a tin with parchment paper, spoon in the mixture, level it and bake in an oven of 180 degrees C for 1 to 1 1/2 hour until firm.
Insert a skewer or knife in the middle if it comes out clean, its done.
Leave to cool and remove the baking parchment.
