Ingredients

  • Pork Loin

Mojo Picon sauce:

  • 4-5 tbs olive oil
  • 1 cup water
  • Half teaspoon paprika (smokey is best)
  • 2-3 small chilli
  • 1 tap cumin seed
  • 5 small garlic cloves
  • 1 slice pan de campo (Spanish Bread)
  • Salt
  • 2-3 tbsp red wine vinegar
  • 1 ñora (dried red pepper)

Method

1, Put it all in the blender and adjust if necessary

2, Place the pork loin in this sauce preferably overnight or for several hours

3, Lightly fry pork loin and place inside the bread rolls. I buy the partly baked rolls and give them 10 minutes in the oven.
