Cupavce (Lamington)

Cupavce (Lamington) is a sponge cake with a rum kick, coated in a layer of melted chocolate and rolled in desiccated coconut. YES PLEASE!

Ingredients

  • 500g chocolate (milk chocolate)
  • 3 eggs
  • 2 cups sugar
  • 1 cup sunflower oil
  • 1 cup milk
  • 2 cups flour
  • 1 pack backing powder
  • 1 tablespoons rum (or a bit more ;))
  • 400g coconut flakes
  • Butter for the baking tray (use the one that comes with the oven)
  • Bit of milk for melting the chocolate.

Method

1, Mix 3 eggs and 2 cups of sugar until the mixture gets light and fluffy.

2, Add 1 cup of oil, 1 cup milk, 2 cups flavour, baking powder and the rum.

3, Put the dough smoothly into the baking tray and place it in the pre heat the oven (150C, for around 20-30 minutes).

4, Once ready and a knife come out clean, let it cool down. In the meantime melt the chocolate with a bit of milk.

5, Cut the Biscuit into cubes (5×5 cm), coat it first with the chocolate, then with the coconut flakes.
