Ingredients
- Half teaspoon chilli oil
- 2 tbsp olive oil
- 1 large onion
- 1 Red pepper
- 2 Garlic cloves
- Half teaspoon chilli powder (hot or mild depending on your preference)
- 1 tsp Paprika
- 1 tsp Ground cumin
- Half tsp dried majoram
- 550g Lean minced beef
- 1 Beef cube
- Tip of tsp of coriander powder
- 400g Can chopped tomatoes
- 2 tbsp tomato Frito solis
- 2 tsp white sugar
- 3 tbsp tomato purée
- 400gms red kidney beans
- White rice to serve and naan bread
Method
1. Chop onion, pepper and garlic. Heat olive oil add onion and cook until soft, add pepper, garlic, chilli powder, paprika, chilli oil and cumin. Stir and cook for 5 mins stirring occasionally.
2. Add a little drop of water, then add meat stir and break up meat with spoon . Keep stirring and prodding until meat is cooked.
Sauce
3. Add 250ml hot water together with beef cube to meat mixture, add tomatoes, tomate Frito, majoram, coriander, sugar and tomato purée, stir and season with a little salt, stir again and simmer gently for 5mins. Bring to the boil, cook for 20 mins on a low heat. Check occasionally and stir so that sauce does not dry out, if dry add a little water.
4. Drain and rinse kidney beans and add to mixture, stir and gently bring to the boil, cook for 10mins on low heat, adding a little water if necessary. Taste and season to your liking, serve with rice and naan bread.
