- 500grs chicken diced
- 2 big tins tuna
- 500grs prawns
- 500grs pork loin cubed
- ¼ cup olive oil
- 2 cups wine
- 6 cups water
- 1 med onion chopped
- 1 med green pepper cut in big chunks
- 3 whole garlic cloves
- 1 med tomatoes peeled and chopped
- 1 bay leaf
- 1 chicken cube
- 1 jar 560g Fried Tomatoes (sugar free optional) (Tomate frito)
- 1 dried red pepper (Pimiento chorizero)( previously immerse in a bowl with hot water, then scrape inside)
- Salt and saffron
Saute the onions,garlic,green pepper and chopped tomatoes. Add the chicken, meat and bayleaf and cook with vegetables for a bit, sealing all the nutrients of the chicken and meat.
Pour the wine, water,fried tomatoes and the flesh of the dried pimiento and cook for until the meats are tender.
Once the meat is tender and nearly time to serve mix in tuna and prawns cook for 5-10 mins.
This is when you add the rice. 1 and 1/2 cup full per person. The rice is not to be added until about 20 mins before serving.
