Tuna Bake


  • 2 small tins tuna in brine
  • 1 sliced tomato
  • 1/2 large aubergine sliced
  • 1/2 large courgette
  • 1 small green pepper
  • 1/2 cup low fat grated cheese
  • 1 egg
  • 2 egg whites
  • Salt pepper


1, Lightly spray oil on dish

2, Grill all vegetables

3, In an oven dish place the aubergine at the bottom of mould followed by courgettes, green pepper, tomatoes, salt, pepper, tuna and lastly another layer of aubergine. Cover with cheese and pour the beaten eggs and egg whites.

4, Place this into a preheated oven 150 deg for 15 mins uncovered, then 15 mins covered with foil.
