Spring Salad

Refreshingly Mediterranean.This salad’s contrasting sweet and savoury combination and fresh ingredients make this a great salad any time of the day.

To Serve:

  • 4 Baby Artichokes
  • Olive Oil
  • Fresh Parmesan
  • 1 Tsp Mustard Frozen Peas
  • 40G Serrano Ham
  • Rock Salt
  • Black Pepper
  • Balsamic Vinegar
  • Rocket 1/2
  • Red Onion

Method

Remove the outer leaves of the artichokes, leaving only the paler inside ones and the heart, boil with the peas for 10 minutes then drain and leave to cool. Thinly slice the artichokes lengthwise once cooled.

Toss into a bowl with the peas, rocket and sliced onions.

Cover this with the salt, balsamic, olive oil and mustard and toss together.

Layer shaved parmesan and serrano ham slices and finish off with a crushing of black pepper.
