Stuffed Squid

  • 1 large onion
  • 6 cloves of garlic
  • 1 fresh tomato
  • 1 small red pepper
  • 1 small green pepper
  • 1 sachet of azafran (saffron)
  • Half Pkt Solis tomate Frito
  • Half fish cube
  • Handful peas
  • 6 potatoes
  • 1kg squid
  • Olive oil

1. Stuff the squid with the ingredients, don’t overfill and seal with toothpicks. I fry gently in olive oil on both sides to seal the stuffing and take out.

2. Make the sauce by frying the onion, leek, garlic and green pepper, adding the wine, brandy and stock, add the squid and simmer until tender.

3. Take out the squids and blend the sauce so that it is not lumpy, add the potatoes and the peas and when almost ready add the cooked squids and grated or pureed fried almonds.
