Coconut Flan – Flan de Coco

Ingredients

  • 1 tin condensed milk
  • 3 eggs
  • 2 1/2 cups of warm water
  • vanilla essence
  • 1/4lb coconut

Method

1. Beat eggs and mix together with  milk, water, vanilla essence.

2. When all is mixed add the coconut and make the caramel

3. Pour your caramel at the bottom of your dish and cover with your flan mixture. Place in the oven at 150C for about 2 hours in a Bain Marie.

Mama’s tip: I would suggest dividing your mixtures into smaller ramekins and place these in a large oven dish with a paper towel inside covering the bottom of the dish so that the ramekins do not move with the water, allowing for easy movement in and out of the oven.
