Potato Salad and Chard Fritters

  • *Potato Salad*
  • 1 big potato boiled and mashed
  • 1 small tin tuna drained
  • 1 boiled mashed egg
  • 2 tablespoonful mayonaise
  • salt and pepper
  • Decoration olives
  • Strips of tinned red peppers.

Chard Fritters

  • 67 grams Chickpea Flour
  • 100 grams water
  • 100 grams chards (Acelgas)
  • 1 grated garlic clove
  • salt and pepper

Firstly we will begin with the simple salad, mix all the potato salad ingredients together into a small bowl and decorate with the olives and peppers.

Secondly scald the chards and drain.

Mix the water with the chickpea flour, salt and pepper, follow by adding the chards and stirring very well. Fry a spoonful of this mixture in very hot oil. Drain excess oil in Kitchen paper. Eat warm.
