Vegetable Tortilla


  • 1 Aubergine,
  • 2 Courgettes,
  • Onion
  • Green and Red Peppers
  • 2 Tomatoes
  • 6 Eggs
  • Salt
  • Pepper
  • Olive Oil


Preheat oven 180 deg

1, In the oven, roast peeled and sliced aubergine, courgettes, onion, green and red peppers.

2, Once roasted transfer to a bowl. Add peas and diced peeled tomatoes. Beat 6 eggs and add to vegetables. Salt and pepper. Pour into greased mould, squirt a little olive oil and bake until set. This can also be cooked in a frying pan at med heat. Just like and ordinary Spanish omelette.
