Pollo al la Pepitoria – Pepitoria Chicken

  • 1 Onion (Cebolla)
  • 4 Cloves Of Garlic (Ajos)
  • 1 Slice Of Bread
  • 1 Glass Of White Wine Or A Glass Of Beer (For A Whole Chicken)
  • 1 Whole Chicken Or 8 Chicken Legs
  • Ground Cumin (Comino Molido)
  • Bay Leaves (Hojas De Laurel)
  • Saffron (Azafran)
  • Salt And Pepper
  • Chicken Stock
  • 2 Eggs
  • Parsley (Perejil)
  • Mushrooms (Champiñón)
  • Pine Nuts (Piñones)

1. Chop the onion and garlic and fry gently with a little olive oil until lightly browned,

2. Add a slice of bread and fry with the onions and garlic, once you have done this pour in a glass of white wine or beer,

3. Mash or blend everything together and add 1 teaspoon ground cumin, 2 bay leaves, a little saffron, salt and pepper, chicken cube and some water to cook and allow to cook with the chicken pieces.

4. Meanwhile boil 2 eggs, when the chicken is ready grab the yolks and mash and pour over the chicken with chopped parsley,

5. You may also add pine nuts or mushrooms if you wish but that is up to the persons taste.

6. Serve with mashed potatoes and boiled peas
