Courgette Omelette


  • 1 kilo peeled and boiled courgettes
  • 1/4 grated cheese
  • 3 eggs
  • 2 slices bacon
  • Salt 


1, Drain the courgettes really well. I usually squeeze the water out by putting the courgettes in a clean teacloth and pressing.

2, Mix the drained courgettes, cheese,eggs and salt.

3, Place the pieces of bacon in a lightly greased heated frying pan. Pour the mixture on top and lower your heat. Flip a couple of times. I usually finish mine in the microwave.

4, Cutting the bacon into bits and mixing with eggs etc is a great idea too.
