Padrón Peppers with Rock Salt

I have always been a fan of padron peppers. Simply fried and generously seasoned to perfection. This recipe is very simple and quick to do as the padron peppers are very easy to cook. We want to keep the fresh taste of the peppers and soften them.

Ingredients

  • 10 ml Virgin Olive Oil
  • 50 g Padrón Peppers
  • Coarse rock salt

Method

First, in a large frying pan pour your oil and allow it to heat over a medium – high heat until you see the oil is excessively hot. (It may start spitting or smoking)

Carefully and gently place your peppers in the oil and stir around for a minute to quickly cook the skin of the peppers. Take extra care when doing this as the oil will most likely spit out of the pan.

Finally serve by sprinkling a large pinch of rock salt over your peppers.
