Vegetarian Cannelloni

  • Spinach
  • Grated Cheese
  • Onions
  • Garlic
  • Green Beans
  • Peas
  • Carrots
  • Broccoli
  • Cauliflower
  • Sweetcorn
  • Peppers
  • Tinned Chopped Tomatos
  • Tubed Pasta
  • Basil,
  • Oregano

Preheat oven to 200 Degrees

Begin by boiling the Carrots, Peas, Broccoli, Cauliflower and Green Beans, together until soft.

Once Boiled pour your vegetables into a blender with a bit of water (not too much or you will have to drain the excess later) but enough to create a paste when everything is blended, add the spinach, sweetcorn and peppers, a bit of garlic and half an onion and blend everything together into a paste. season with a bit of salt, pepper and basil.

Prepare the sauce:

Finely chop garlic and the other half of the onions and fry on a low to medium heat to soften,
once soft and cooked add in your tin of tomato and stir together, season with salt, pepper, oregano and basil and leave on a low heat.

Back to the vegetable stuffing:

Pour your mixture into a large bowl, if you see that it is too runny, sieve the excess water away, add in some grated cheese and mix together.

Now grab your tubed pasta and fill each one completely with your mixture.

In an oven dish pour some of your tomato sauce and place your now stuffed tubes pasta on top and once all of the pasta tubes have been placed cosily in your dish cover them with the rest of your sauce and place in the oven with a foil over your dish.

Leave to cook for 30 minutes or so then remove your foil cover and sprinkle cheese on top,
Return to the oven for another 10 minutes or until cheese is golden.

let sit for a minute or two and serve.
