Mama’s Volcano Cakes

  • 225 g Self Raising Flour
  • 110 g Butter
  • 85 g Caster Sugar
  • 30 g Desiccated Coconut
  • 55 g Glazed Cherries
  • 1 Egg
  • 3 tbsp whole Milk
  • Jam

1.Mix the flour with butter, and rub together until it resembles  a breadcrumb texture. Now add sugar, coconut and cherries and beat the egg with the milk.

2. Place on an oven tray in small heaps and make a thumb size dip in the centre to place jam.

3. Bake in the oven at 200°C and cook for 20 – 25 minutes. When ready, leave to cool and pour a spoonful of jam in the hole.
