Mama’s Almejas al Ajillo – Garlic Clams

  • Oil
  • 500 g Fresh Clams
  • 2 Garlic Cloves
  • Parsley
  • Splash of White Wine
  • Salt

(make sure the clams have been sitting in water for several hours before so they release any sand they have inside)

1. Pour a tablespoon of oil into your frying pan.

2. Slice the garlic and fry until it is just golden.

3. Add the clams and parsley and cover your pan.

4. Once clams are semi-opened, add a splash of white wine and stir.

5. Simmer for a couple of minutes longer.
