Jureles en Escabeche – Mackerel in a Pickle Marinade

Ingredients

  • 1 kilo mackerel
  • 1 cup malt vinegar
  • 1/2 water
  • 3 teaspoon salt
  • 4 slices bread without crust
  • 4 garlic cloves
  • 2 bayleaves
  • 2 teaspoon Paprika

Method

1. Clean fish and cut into 2 or 3 pieces depending on the size. Mix with the vinegar, water and salt together and immerse the fish and marinade for about 6 hours.

2. Drain the fish and keep the liquid. Dust the fish with flour and fry them.

3. Fry bread, garlic and using your pestle and mortar mash together.
In a bowl mix the above mixture with the liquid kept aside plus 1/2 cup of the oil used for frying fish etc. Stir and pour over the fried fish.

Remove the bayleaves.
