GRILLED GOAT’S CHEESE & WALNUT SALAD

Is there a better feeling than a cold freshly cut salad on a hot spring or summer’s day? Particularly when you have the contrast of the smooth, yet strong goat’s cheese, sweet honey and sharp balsamic to balance everything out.

Ingredients

  • 120G Goat’s Cheese
  • 75G Walnuts
  • Balsamic Vinegar
  • 1 Tbsp Honey
  • Olive Oil
  • 1 Red Pepper
  • Rocket Leaves
  • Spinach Leaves
  • 1 Fresh Tomato
  • Lettuce
  • Sweetcorn

Method

1, Place the goat’s cheese on the a baking tray and under a medium grill.

2, Whilst the cheese is in the oven, under the grill, chop up your vegetables, slicing the peppers into strips and dicing the tomatoes into wedges. Throw all your vegetables together into a large bowl, including the walnuts.

3, After 10 minutes, check the cheese, which should now be softer, yet crisp on top. Carefully place this on top of the vegetables in the bowl and drizzle over with a tablespoon of honey, a generous splash of balsamic vinegar and olive oil.
