Gazpacho is the ideal refreshment on hot spring and summer days when the sun is blazing down. Full of so much flavour I decided to take inspiration from the traditional tomato Gazpacho and give it a twist, making Cucumber Gazpacho.
Ingredients
- 5 Cucumbers
- 2 Green Pepper
- 1 Green Chilli
- 1 Spring Onion
- 2 Garlic Cloves,
- 1 Dry Bread Roll
- Handful Mint Leaves
- 350 ML Olive Oil
- 200 ML Water
Method
1, Chop your ingredients and place them in a blender with the water.
2, Pour in the olive oil as you blend the ingredients together until you see the mixture thinning, becoming smoother and lighter.
3, Pass the soup through a sieve or cloth and squeeze, this will remove any large bits and excess, giving you a thin and fresh tasting soup that’s easy to serve and enjoy cold.

Let me know how that turns out, I’m not a massive avocado fan myself but could be interesting with yoghurt.
Yogurt would make it a tzatziki soup though 🙂 How about just a dollop of yogurt or sour cream as a garnish?
if I remember, I will! Just trying to use something other than oil so may try really ripe avocado…
