SUMMER SALAD – Mozzarella, basil and tomato

Mama’s summer salad is simply refreshing. The Mediterranean salad sends you back to her Sicilian routes and the vibrant taste of Italy. Bellissimo!

Ingredients

  • 3 – 4 large Andalusian Tomatoes 
  • 250G Mozzarella Ball 
  • Fresh Basil leaves 
  • 1 Garlic Clove 
  • Fresh Parsley leaves 
  • Balsamic Vinegar 
  • Olive Oil

Method

1, Slice your tomato into centimetre thick circles and do the same with the mozzarella, slicking them slightly thinner.

2, Lay your tomatoes, cheese and basil in a dish laying them one after the other, you should be able to make two rows, depending on the slice of the dish.

3, Peel and very finely dice your garlic clove, doing the same to the parsley. Mix these two ingredients together with a generous helping of olive oil and balsamic, stirring together. Don’t worry as the oil and balsamic will separate.

4, Pour your dressing over your salad and if necessary season with a crushing of sea salt.
