Stuffed Artichokes

  • 6 Med Artichokes


  • 2 cups grated cheese
  • 3/4 cup grated bread
  • 3 eggs
  • 2 grated garlic cloves
  • Marjoram, salt and food colouring.


  • 1 chopped onion
  • Squirt olive oil
  • Water, veg cube, bay leaf
  • Peas
  • 4 eggs

1. Chop end of artichoke and save the stalk. Also chop front bit and widen so to be able to stuff.

2. Mix all stuffing ingredients together and proceed to stuff the artichokes. Make small balls with remaining stuffing.

3. In a large pan place the stuffed artichokes, chopped onions, artichoke stalks, garlic, bay leaf, olive oil, salt and veg cube. Fill with boiling water to the brim of the artichokes, bring to the boil and cook for about 45 to 60 mins in a medium heat. Add the peas and break the four eggs, let it cook until eggs are done.
