Roasted Green Beans & Crispy Garlic Salad to enjoy as a side dish or simple plate up for everyone to dig in.
Ingredients
- 650g Green Beans (trimmed)
- 1 White Onion (finely sliced)
- 1 Red Onion (finely sliced)
- 15 Garlic Cloves (thin slices)
- 1 Lemon (juiced)
- 2-3 Tbsp Olive Oil
- Dark Soy Sauce (To taste)
- White Wine Vinegar (To taste)
- Apple Cider Vinegar (To taste)
- Sea Salt
- Black Pepper
- Dried Oregano
- Dried Parsley n*Optional*
- Flaked Almonds (handful)
Method
1, Preheat oven to 200 C. Rinse green beans and drain.
2, On a large roasting pan, spread the green beans in an even layer.
3, Place the sliced onions and garlic on top of the green beans.
4, Combine lemon juice, olive oil, soy sauce, vinegars, salt, pepper, and herbs in a small bowl and pour over the top of the green beans/onions/garlic.
5, Mix by hand in the roasting pan until all ingredients are combined and covered.
6, Roast in the oven until beans, onions, garlic start to ‘caramelize’.
7, In the last few minutes of roasting, top beans with flaked almonds and roast until they start turning golden brown. Remove pan from oven, transfer beans to serving dish and enjoy!
