Aubergine Loaf



  • 1 sliced onion
  • 1 sliced green pepper
  • 1 big aubergine sliced
  • 1 big courgette sliced
  • 1 egg
  • 1 cup milk
  • 12 slices ham
  • 1 cup grated low fat cheese
  • Salt and pepper


1, Preheat oven to 180 deg

2, Grill the aubergine, courgette, onion, green pepper.

3, Beat egg , milk, salt and pepper

4, Cover mould with parchment paper. Start with layer of aubergine followed by layer of courgette, green peppers and onion. Cover with 6 slices of ham and scatter grated cheese. Repeat once again. Finish with a third layer of aubergine and thin layer of remaining grated cheese.

5, Bake for 40 to 45 mins. Cover with foil if extra baking is needed.
