Mum’s Huevos Rotos

Huevos Rotos, one of the meals I enjoy ordering when I go for tapas are these ‘broken eggs’. All your Iberian favourites in one simple dish. You cannot go wrong.

Ingredients

  • 2 Potatoes
  • 1 Egg
  • 6 Padron Peppers
  • 4 Garlic Cloves
  • 60 G Chorizo
  • 3 Slices Serrano Ham
  • Salt

Method

Slice 2 potatoes lengthwise into chips and cover in salt. Fry in oil until tender and crisp. 

Meanwhile, remove the seeds from the peppers, and place the garlic, whole, in a frying pan with chopped up chorizo and the padron peppers. 

Fry the egg separately. When everything is ready, Drain the oil from the potatoes and pour all the ingredients from the pan over the chips. Shred the ham slices place them in the centre and lay the fried egg over.
