This fresh tomato salsa is perfect for dipping your tortilla chips or as a base for your sauces.
- 6 Tomatoes
- 2 Shallot
- 1 Fresh Green Chilli
- 1 Red Pepper
- 1 Lime
- 2 Garlic Cloves
- Fresh Coriander
- 5 Tbsp Olive Oil
Chop your tomato into very small chunks and place in a large bowl.
Next, finely slice and dice your other ingredients into small pieces, except for the lime, leaving it to one side.
When diced, mix together with the tomatoes and cover with olive oil.
Toss all your ingredients together, and dress with the juice of a lime. If need be, season with a crush of rock salt.
