This dish was a favourite at home. My parents called it Fideos a la Malte (Maltese Pasta) if the recipe actually comes from there I can’t be sure though we do have Maltese family.
- 250 grs Macaroni
- Vegetable Stock Cube
- 150 grs bacon or Spam
- 200grs grated cheese
- 1 egg
- 1 small tin tomato puree
- 2 sliced garlic cloves
- Salt and pepper
- 2 tablespoon Olive oil
1, 250G Macaroni previously boiled with a vegetable cube and a splash of olive oil added to the water.
2, Heat oil and fry garlic, tomato puree and bacon bits. Add the drained boiled pasta and fold gently.
3, Salt and pepper to taste. Beat in one egg and grated cheese. Stir together.
Sprinkle with extra cheese once on the plate.
