- 50 grams butter, softened
- 6 – 7 sliced bread, crust removed
- 75grs sultanas
- 3 med eggs
- 300ml single cream
- 300ml whole milk (I used semi)
- 50grs sugar (if diabetic 40grs Fructose)
- Pinch of mixed spices
Grease a l,2 litre/2 pint oven proof dish.
Spread the butter over the bread,cut in half then arrange overlapping in the greased dish.Scatter some sultanas over the bread.
Beat the cream, milk, eggs, sugar and mixed spices together. Pour over the bread and leave to soak or 30 mins.
Put the dish in a roasting pan filled with boiling water, enough to reach half way the pudding dish.
Bake for about 40 – 45 mins until the top is of a golden colour. Dust some more sugar or fructose on the top.
Can be served with cream.
