Coconut Delight

  • 1 cup sunflower oil
  • 1 cup caster sugar
  • 2.5 cups self raising flour
  • 3/4 cup milk
  • 1cup desiccated coconut
  • 1teaspoon vanilla extract
  • 1cup walnuts
  • 2 eggs
  • Flaked almonds and sugar and syrup to decorate

Mix all ingredients except walnuts together in a mixer until smooth, then fold in walnuts.

Pour mixture in greased loaf tin. Sprinkle sugar on top and add flaked almonds.

Place in oven for 45 minutes at 150 c or until skewer comes out clean. Cover with foil paper for first 25 minutes.

When the cake is still warm pour golden syrup on top.
