Ingredients
- 500 grs boneless chicken thighs
- 1 large aubergine diced
- 1 large courgette diced
- 1 small red pepper sliced
- 1 small green pepper sliced
- 1 med onion sliced
- 1 med carrot diced
- 2 chopped garlic cloves
- 1 cup passata
- 1 cup wine
- 1 gluten free chicken cube
- 1 Tablespoon olive oil
- Salt
- pepper
- oregano
Slow cooker …serves 2
Method
1, Heat oil and add all vegetables except passata. Add salt, pepper and oregano. Cover and cook until tender. Stir occasionally. Add wine and passata, stir and cook for a couple of mins.
2, Transfer everything to the slow cooker. Seal lightly the chicken pieces and also transfer to slow cooker. At Medium heat until tender. Couple of hours at least.
