Aubergine, Courgette and Goat’s Cheese Towers

Ingredients

  • 1 Large Aubergines
  • 1 Red Pepper
  • 1 Large Courgette
  • 2 Shallots
  • 2 Garlic Cloves
  • Balsamic Vinegar
  • 2 Vine-Ripened Tomatoes
  • Goat’s Cheese

Method

1. Oil the bottom of a large frying pan and place over a medium heat. Slice your aubergine into thin circles and fry them until they are soft. Season with salt and place to one side.

2. Once your aubergines have been placed to one side, oil the pan once more and fry the chopped pepper, courgette, shallots and garlic until they have softened slightly. Add a sprinkle of balsamic vinegar and cook a little further.

3. Before everything softens too much add in your tomatoes and season with salt and pepper, then everything is softened. Set aside to cool.

4. In an oven dish separately lay your towers.

  • Aubergine slice
  • Vegetable mixture
  • Goat’s Cheese slice
  • Aubergine slices

You should be able to get 2 layers each.
