Ingredients
Cake Mix
- 110g butter or margarine softened
- 110g caster sugar
- 110g self raising flour
- 2 eggs lightly beaten
- 1tsp vanilla extract
- 1-2 tbsp milk
- 12 hole muffin tin with paper cases
Butter Cream
- Butter cream icing
- 140g butter softened
- 280g icing sugar
- 1-2 tbsp milk
- Few drops food colouring
- Any decorative sprinkles
Method
Cake Mix
1. In a bowl, cream butter and sugar until pale in colour, beat in eggs a little at a time, add vanilla extract.
2. Fold in flour adding a little milk until the mixture is of a dropping consistency. Spoon mixture into paper cases.
3. Bake in oven at 180c for 10-15 minutes or until golden brown. Set aside to cool for 10 mins, then remove from tin and cool on a wire rack.
Butter Cream
1. In a bowl beat butter until soft, add half the icing sugar and beat until smooth. Add the remaining icing sugar with one tablespoon of milk, adding more milk if necessary until mixture is smooth and creamy.
2. Add food colouring and mix well. Spoon icing into a piping bag with a star nozzle and pipe the icing onto the cup cakes to decorate. Add the sprinkles to finish off if desired.
