Sweet Potato Pie

Sweet potato is often part of a savoury main course dish, but why not a sweet dessert? This Sweet Potato Pie smells amazingly with cinnamon and vanilla.

Ingredients

  • 2 -3 Medium Sweet Potatoes
  • 1 Cup Sugar
  • 150G Ground Almonds
  • 1 Cup Milk (plant based alternative)
  • 2 Eggs
  • 1 Packet Short Crust Pastry
  • Nutmeg
  • Ground Cinnamon
  • 1Tsp Vanilla Extract

Method

1, Boil your sweet potatoes with the skin and allow them to cool down. Once they are cool and soft, peel the skin off and mash them down.

2, Once your potatoes are mashed, add the sugar and stir in. Continue to stir, adding in the ground almonds, milk, eggs and vanilla extract, a teaspoon of cinnamon and a pinch of nutmeg.

3, Line a pie dish with your pastry and gently press down the base of the pie with a fork. Pour your mixture into the pie dish and roll up the sides.

4, Place the pie in the oven for 40 minutes – 1 hour at 180C.

5, When ready, leave to cool completely, allowing it to set and serve.
