Ingredients
- 1 whole chicken
- 2 tsp paprika
- 4 tsp salt
- 1 tsp cayenne pepper
- 1 tsp thyme
- 1 tsp white pepper
- 1/2 black pepper
- 1/2 garlic powder
- 4 crushed garlic cloves
- 3 cut celery stalks
- 1/2 lemon
- 1 whole, small onion
- 4 garlic cloves.
- 1/2 sliced onion
- 1 cup sliced pumpkin
- 2 med sliced carrots
- 1 large sliced potato
- 1/2 sliced red pepper
You’re going to need a slow cooker for this dish.
Method
1 Rub the mixture ingredients (up to the lemon) over the whole chicken.
2 Inside the chicken place 1/2 lemon, 1 whole small onion and 4 garlic cloves.
3 Line bottom of slow cooker with following vegetables:
3 cut celery stalks
1/2 sliced onion
1 cup sliced pumpkin
2 med sliced carrots
1 large sliced potato
1/2 sliced red pepper
4 Place chicken ontop of vegetables and cook on low heat for 8 hours.
5 Carefully place chicken on a plate with the potatoes and liquidise the rest of the vegetables except the red pepper with a little of the juices.
This can be served over the potatoes.
